Profile
Ever Hernández Olivas holds a Bachelor's degree in Chemical Engineering and a Master's degree in Food Technology from the Autonomous University of Chihuahua (UACH, Mexico). He obtained his Ph.D. in Food Science, Technology and Management in 2021 from the Polytechnic University of Valencia (UPV, Spain). During his master's studies and previous professional appointments, he worked on research lines focused on food processing, preservation, and the development of novel food products, evaluating their physicochemical, structural, and sensory properties.
His doctoral research focused on the application of in vitro methodologies to evaluate the impact of host-related gastrointestinal characteristics (e.g., healthy adults and older adults), as well as intrinsic food characteristics (composition, origin, structure, etc.), on nutrient digestibility. He also gained experience in simulating gastrointestinal conditions of infants and individuals with cystic fibrosis. Subsequently, he completed a postdoctoral research fellowship at the Moorepark Food Research Centre of Teagasc (the Irish Agriculture and Food Development Authority) within the European Horizon Europe project “Giant Leaps,” which aims to accelerate the transition from animal-based proteins to alternative food proteins, contributing to the development of a safe, healthy, and sustainable food system.
He has published 16 articles in high-impact scientific journals in the field of Food Science and Technology. In addition, he has participated in national and international conferences related to food research. Throughout his scientific career, his research activities have been aligned with the Sustainable Development Goals established by the Food and Agriculture Organization (FAO) of the United Nations in the 2030 Agenda, particularly those related to Sustainable Food Systems and Good Health and Well-being.
