Profile


Pablo Gallego Lobillo is a Postdoctoral Researcher in the Food Technology Area at the University of Valladolid since March 2025. He obtained his Ph.D. in Food Science from the Autonomous University of Madrid (UAM) in 2022 for the thesis “Prebiotic Carbohydrates: Digestion Mechanisms, Gut Microbiota Modulation, and Synthesis of New Oligosaccharides”. His main research has focused on the biochemistry of dietary and prebiotic carbohydrates and development of in vitro digestibility methods to evaluate their effect on metabolic response. Additionally, he has explored the impact of prebiotic carbohydrates on chronic diseases, including cancer; as well as the production of new carbohydrate derivatives with potential prebiotic effects. After completing his PhD with highest distinction, he was awarded with a competitive postdoctoral research grant for a duration of 2 years (2023-2025), hosted at the department of Food Science in Aarhus University (Denmark). This project allowed broadening the scope of his research on understanding polyphenol metabolism, deglycosylation and its non-covalent interactions within polysaccharides and their effect on the gut microbiota.

Research lines


- Analytical methods to elucidate structural features of polysaccharides, including monomer composition, hydrodynamic and molecular weight, anomeric configuration and chain length distributions.

- Interactions between food macromolecules and small metabolites (e.g., polyphenols) in complex systems.

- Health aspects, particularly the digestion and bioaccesibility of plant biopolymers and phenolic compounds and the role of polysaccharides as dietary fiber.
