Ivan Misael Lopez-Rodulfo is an MSCA Postdoctoral Researcher in InnograinLab since June 2026. He obtained his Ph.D. in Food Science from Aarhus University (AU, Denmark) in 2025 for the thesis "In vitro bioaccessibility and metabolic effects of polyphenols from different apple matrices in the upper gastrointestinal tract".

His main research has focused on the biochemistry of polyphenols, their metabolic outcomes considering biotransformation during gastrointestinal and colonic digestion at both systemic and microbiota levels. Notably, as part of his PhD, he discovered a previously unreported esterase activity of pancreatic lipase on specific phenolic conjugates, revealing a novel small-intestinal remodelling pathway for dietary polyphenols. Additionally, he has explored the impact of dietary fiber structure on modulating the gut microbiota, either individually or in complex structures in combination with polyphenols or other polysaccharides. After completing his PhD, he continued as a postdoctoral researcher at the Department of Food Science (AU) for 14 months (from 2025 to 2026). His interdisciplinary training spans analytical chemistry, gut microbiology, and enteroendocrine cell physiology, enabling him to bridge food matrix design with mechanistic gut health outcomes.
